Tasty Tuesday: Sopapilla Cheesecake Bars

We love Mexican food. We eat it a lot. In fact, because the people of our new church eat much less than I expected, we just yesterday finally finished the last of the leftovers from our church-wide Sunday lunch of Mexican food that we hosted about 3 weeks ago. No worries, though, it was not meat–just chips and salsa (Chili’s copycat salsa, to be precise–mmmm).

Anyway, one day I searched (pinterest, of course) for a Mexican dessert. And I came upon these absolutely delicious (and, again, horribly unhealthy) bars. They are super yummy with cinnamon ice cream–especially homemade cinnamon  ice cream. Well, I made these bars again at our church fellowship Mexican shindig, and people raved. It is not authentic Mexican, I know, but who really cares as long as it tastes good?! 🙂

It is also incredibly easy. I have friends who say they can’t bake. You can’t go wrong on this one.  Unless you forget an ingredient. . . like the crescent rolls. . . So, here it is:


2 8-oz packages cream cheese, softened

2 cans of crescent rolls

1 cup sugar

1 tsp vanilla

½ cup butter, melted

½ cup sugar

1 tbsp cinnamon


  • Preheat oven to 350.
  • Spray a 9×13 pan with baking spray. Beat together cream cheese, 1 cup sugar, and vanilla until smooth.
  • Unroll 1 package of crescents and line the bottom of the pan, pinching the seams together.
  • Spread cream cheese mixture over the rolls.
  • Unroll second can of crescents on top of the cream cheese layer, pinching seams together (it’s ok if not everything’s covered).
  • Pour 1 stick of melted butter over the top of the crescents.
  • Mix remaining sugar and cinnamon together and sprinkle evenly over the butter layer.
  • Bake at 350 for 30 min.
  • Cool, then chill completely in the fridge before cutting and serving.
  • Enjoy!
